Avo Mustard & Dill Breakfast Muffins

Ingredients

2 x English muffins 1 x small ripe Hass avocados. 2 x poached/boiled eggs 2 x tsp seeded mustard Fresh dill to serve.


Method

1. Poach/boil eggs for 3-4 minutes. 2. Toast english muffins to desired toasting level. 3. Spread 1/4 x of avocado on each muffin half. Top with mustard seeds. 4. Season with salt and pepper and add dill to serve.
