Balanced Bella Bowl





Ingredients (for each bowl)

0.5 cup cooked Basmati rice

1 cup roasted sweet potato or pumpkin

0.5 can Mexican bean mix

4 cherry tomatoes, halved

0.5 Lebanese cucumber

0.25 diced red capsicum.

0.25 Hass avocado

1 tsp paprika

1 tsp cumin

1 tsp chilli flakes

1 tsp coriander

1 tsp olive oil

Lemon and olive oil drizzle for the dressing.

Salt and pepper to taste.


Method 1. Heat oil in a saucepan. Add Mexican beans and allow to simmer for 2 minutes. Add paprika, cumin and chilli. Allow to simmer for a further 2 minutes.


2. Add rice, then Mexican beans and sweet potato to a serving bowl. Layer with cherry tomatoes, cucumber and capsicum.


3. Top with avocado. Sprinkle with coriander. Drizzle with olive oil and a squeeze of lemon juice for the dressing.


4.Serve and enjoy!
