Plant Based Pancakes (Gluten Free)

Ingredients 1 cup oat flour (oats blended to create a flour consistency) 1 cup self raising flour 1 tsp baking powder ½ tsp salt 1 tsp cinnamon 3/4 cup milk (recommend soy or almond) 1 tsp vanilla extract 1 tbp coconut oil, melted 2 bananas, mashed into a puree
Method 1. Blend oat flour, self raising flour, baking powder, cinnamon and salt in a bowl. 2. Combine milk and banana puree in a seperate bowl. Mix well, before combining with dry ingredients. 3. Add in vanilla essence. 4. Lightly grease a pan and pour a ¼ cup of batter into the pan, cooking for about 2 minutes on each side, until golden brown. 5. Continue until all the batter has been used. 6. Serve with your favourite toppings! Recommend Canadian maple syrup with fresh strawberries.
