Mexican Wraps

Serves 4


4 x wholemeal wraps (gluten free if required)

400g x mixed Mexican bean tin, drained then rinsed.

200g chicken or beef steak, diced then grilled.

120g x grated tasty cheese 1 x cup sliced tomatoes

100g spinach

½ x avocado. ½ x cup onion, diced.

2 tablespoons olive oil. ½ x tsp cumin

½ x tsp paprika

½ x tsp dried chilli flakes (optional)

Salsa to serve.


1. Add olive oil to fry pan. Cook diced chicken or beef steak to liking. Set aside on a plate with paper towel to remove excess oil. 2. Heat oil on a seperate saucepan. Add onion and allow to slightly brown. Add Mexican beans. Cook for 2 minutes before combining with spices. Allow to cook for a further 3 minutes. Set aside in a bowl to serve. 3. Build burrito by placing chicken or beef onto the wrap, followed by the spiced Mexican beans. Top with a sprinkle of cheese, salsa, sliced tomatoes, baby spinach and sliced avocado.
