No-Bake Peanut Butter Cookies


1 cup rolled oats

3/4 cup pitted medjool dates

1/2 cup natural salted peanut butter

Pinch sea salt (optional)

Method 1. Place oats and salt (optional) in a food processor and blend into a flour.

2. Add the dates and blend for 30 seconds or until finely chopped.

3. Finally, add peanut butter and process again until a dough forms.

4. Scoop out 2 tbps of dough and carefully form into a round mould, then place on a parchment-lined pan or tray. Repeat until all dough is gone.

5. Optional: Use the back of a fork to create a cross hatch on the top of the cookies (see photo).
