Spring Crumble



Ingredients

CRUMBLE

1 1/2 cup oats

1/4 cup maple syrup

1/4 cup almond butter

1 tsp vanilla extract

1 tbsp coconut oil

1/2 cup oat flour

1/4 cup almonds, roughly chopped

Pinch of sea salt


FRUIT COMPOTE

4 nectarines, sliced

2 cups strawberries, chopped in quarters

1 tsp vanilla extract

Method 1. Preheat the oven to 180 degrees Celsius.


2. Place the chopped fruit in a saucepan over a medium heat and stir until the fruit begins to break down, simmering for about 20 minutes.


3. Add this to an ovenproof crumble dish.


4. Mix together the crumble ingredients in a bowl and sprinkle this over the fruit in the dish.


5. Bake in the oven for 15-20 minutes until the crumble has turned golden brown and crunchy and serve warm!
