Stewed Breakfast Apples

Ingredients 2 red apples, chopped into bite size pieces Handful of raspberries or blueberries ½ inch of fresh ginger, peeled and grated 1 tsp maple syrup 1 tsp cinnamon ½ can of coconut milk Toppings (optional) Granola Toasted nuts and seeds mix


1. Place chopped apple, blueberries, cinnamon and maple syrup into a saucepan and cover the bottom of the saucepan in a few cm’s of the coconut milk. 2. Simmer on a low heat, watching that there is always enough liquid and the apples aren’t sticking to the bottom of the pan. Add a little more coconut milk or water is it starts to run low. 3. Add your grated ginger to the pan and cook for about 20 minutes (at this point, the coconut milk should be evaporated or absorbed). 4. Place the apples in a bowl and use the pan to heat up the remaining coconut milk for a couple of minutes. 5. Pour over the apples, add your toppings and enjoy!
