Sweet Potato & Kale Chips
400g sweet potato,
peeled and sliced thinly.
1 x bunch of kale leaves, washed.
1 x tsp rock salt Olive oil cooking spray.
Method 1. Preheat oven to 220 degrees C (420 degrees Fahrenheit). Line a baking tray with baking. Spread sweet potato slices out evenly amongst tray. Spray evenly with cooking oil spray and sprinkle with rock salt. Place in oven and cook for 15-20 minutes, or until golden brown.
2. Line a second baking tray with baking. Spread kale leaves (washed and drained) out evenly amongst tray. Spray evenly with cooking oil spray and sprinkle with rock salt.
3. Place in oven and cook for 5-7 minutes.
**Suggest serving with a hummus or tzatziki style dip.
