Sweet Potato Toast
400g sweet potato, sliced into
¼ inch thick vertical slices.
2 x tablespoons vanilla bean coconut yoghurt.
1-2 x tsp pomegranate seeds.
1-2 x tablespoons blueberries.
Method 1. Once you have sliced your sweet potato, turn your toaster up to one of the higher settings. If your slices are too thick you may need to microwave for 30 seconds to soften. Each slice may require 2-3 x rounds in the toaster to ensure it is cooked thoroughly.
2. Once sweet potato is cooked to preference, evenly spread coconut yoghurt across slices. Top with blueberries and pomegranate seeds, and finish with a sprinkle of cinnamon.
** Pay attention when you’re buying your sweet potato. Nice large round potatoes work best because you can get good slices out of them. Misshapen or curved ones aren’t as good for toast because you’ll waste more of the sweet potato.
