Ingredients 200g firm tofu ¼ tsp turmeric 1 tsp nutritional yeast ¼ tsp cumin ¼ tsp paprika 1 spring onion, finely diced 1 clove garlic, minced 1 tbp parsley, finely chopped parsley Salt & pepper to taste 1 tbp water Olive oil spray
Method 1. In a small bowl, stir together nutritional yeast, turmeric, cumin, paprika, water, salt, and pepper. Set aside. 2. Spray a frying pan with olive oil and place over medium heat. Once hot, add spring onion and garlic, and saute for about 2 minutes. 3. Crumble tofu into the pan with your fingers. Pour seasoning over tofu and mix well, colouring as much tofu as possible. Cook for 2 minutes or until tofu is hot throughout. 4. Toss in parsley and continue to stir for another 1 to 2 minutes. 5. Serve with your favourite sides and toppings, such as sliced avocado, whole-grain toast, sliced tomato, or our delicious breakfast hash browns!
