Vegan Banana Bread

Serves 8 - 10


1 x cup almond meal.

⅔ x cup self raising flour.

2 x extra ripe bananas, mashed.

⅓ x cup unsweetened applesauce.

½ x cup honey.

2-3 x tablespoons flax seeds.

¼ x cup unsweetened almond milk.

½ x tsp ground cinnamon.

1 x tsp baking soda.

1 x tsp vanilla extract.

Method 1. Pre heat oven to 180 degrees. Combine flax seeds in jar with ½ x cup hot water. Allow to sit for 2-3 minutes, or until sticky consistency forms. Mash bananas in a large mixing bowl. Add flax seed mix, applesauce, honey, vanilla extract & unsweetened almond milk.

2. In another mixing bowl, sift all dry ingredients. Combine wet & dry mix and combine thoroughly. Use an electric beater if you have one and form a cake batter like consistency.

3. Pour mixture into a silicon baking dish. Bake for 35-45 minutes or until skewer comes out clean. Allow to cool for 10-15 minutes before serving.

For breakfast recipe, toast banana bread & serve with 2 x tablespoons vanilla co-yo and ½ x cup fresh berries per slice.
