Zucchini Noodles

Serves 1


2 medium zucchini - made into noodles

1 avocado

Handful of basil

1/4 cup nutritional yeast

2 cloves garlic

Juice of half a lemon

Method 1. For the sauce, blend together the avocado, basil, nutritional yeast and lemon juice.

2. Fry the garlic in a pan with some oil then add in the zucchini noodles with a few tablespoons of water and steam, they only take a couple of minutes to soften.

3. Add the avocado mixture and mix through. Season with salt and pepper, lemon juice and top with fresh parsley, hemp seeds and basil.
